Made in Oxford shire, this raw goat milk cheese is suitable for vegetarian person as Fraser Norton and Rachel Yarrow, the producers, used some vegetarian rennet to make the cheese. Indeed, Brightwell ash, as its name says, is a a small goat cheese with an ash based natural rind, fresh, tangy accompany by a slightly crumbly texture. Slightly hazelnutty with citrus notes, the producers used to controlled correctly the temperature and humidity level in the cave to enhance more complex notes and encourage the development of white bloomy rind.
