Considered as the grandfather of all cheeses, Cantal was first produced over 2000 years ago. Matured between 3 to 7 months, Cantal ‘Entre deux’ AOP features hazelnut hints with a citrusy and fruity finish. Its aroma is a bit more marked than younger Cantal, you will also find gourmet toasted brioche notes. Why do we call it ‘Entre Deux’, literally ‘between the two’? There are 3 kinds of Cantal: the young one aged between 1 and 2 months, ‘Entre deux’ aged between 3 and 7 months, and the oldest one called ‘Vieux’ aged for 8 months minimum.
