Referred to as the grandfather of all cheese, Cantal was first produced over 2 000 years ago. The Cantal Entre-Deux is aged 3 to 6 months and has a stronger character than the Cantal Jeune which is only aged 1 to 2 months. Its texture is medium-hard with a milky nutty flavor and a rather strong aroma.
