Exclusively made by the Fromagerie de Saint-Flour in Auvergne, Carré d’Aurillac is a surprising cheese! This mellow to creamy blue veined cheese is very discreet while young and gains a lot of intensity during its maturation. The raw cow’s milk is delicately mixed with Penicillium Roqueforti before being curdled, drained, molded and salted.
Slightly sticky, unctuous and creamy, it has a delicious milky and buttery flavour, hint of salt and amazing mushroom cellar notes that brings it authenticity.
Perfectly paired with a mango chutney for a wonderful experience.

It’s a bit tangy, which adds to its complexity. Perfect for pairing with fresh bread or enjoying with some charcuterie

We actually really enjoyed this cheese! We didn’t expect it to be very blue at all, but it really did get more and more flavourful as we ate it. (We ate it over a period of time.)
Would suggest if you’re looking for a cheese that changes over time.
