In the past, farmers created the ‘Jura wheels’ to keep the milk longer during the winter and have this protein source all year long for all their family. These wheels were easier to carry around and sell. The recipe of the Comté we know nowadays was introduced in the XVIII century.
The Comté aged 12 months is still young: it expresses a delicate nutty taste while the texture is smooth and supple. Comté has the highest production of all French AOC cheese, it is also one of our best sellers!
