In the past, farmers created the ‘Jura wheels’ to keep the milk longer during the winter and have this protein source all year long for all their family. These wheels were easier to carry around and sell. The recipe of the Comté we know nowadays was introduced in the XVIII century. The Comté aged 12 months is still young: it expresses a delicate nutty taste while the texture is smooth and supple. Comté has the highest production of all French AOC cheese, it is also one of our best sellers!

3 reviews for Comté d’Exception 40 Months
Cynthia Lian –
Strong but balanced nutty, salty, sweet and savoury taste, with some crystals providing additional texture. Very tasty on its own.
D Lo (verified owner) –
One of my favourite comtes. 40 months is truly the perfect sweet spot for me – salty and intense, but not too crumbly. This is a great addition in quiches and savoury galettes.
Brian Lock (verified owner) –
Intensely flavorful. Not too crumbly
