Comté has ancient roots—first indications date back over 2,000 years, much appreciated in Rome by Julius Caesar. In the Middle Ages, producers formed dairy cooperatives called fruitières to craft large wheels. Today, it’s France’s highest-produced AOC cheese and one of our best sellers!
This 18-month aged Comté is deliciously fruity, developing tyrosine crystals that deliver powerful flavor. The favorite of the French, its protein content historically sustained through harsh winters.
Perfect as an aperitif on cereal or nut bread, served with yellow wine or a white Burgundy.
Storage & Serving: Refrigerate up to 5 weeks. Take out 1 hour before serving to fully release its flavors.
Wine Pairing:
Sweet white wines, especially Burgundy (Puligny Montrachet, Meursault)
Dry white wines (Chablis), Vin Jaune from Jura

We repurchase this almost every month. It’s savoury, easy to eat, and easy to pair. I like 18-month maturity – it’s not too hard or crumbly, and it has just the perfect texture to eat with a slice of bread after a meal or even to slice thinly in a sandwich.

The 18 month Comté cheese has very rubbery texture. The worst I have ever had. Can’t believe I brought so much Comté cheese at once. I haven’t try the 24 and 36 months one yet, I hope they didn’t taste like this one.

Just average compared to similar Comtes I had at in France (I had the September monthly order).
Long creamy finish, but low in complexity – none of the fruity flavors mentioned by previous reviewers. I prefer the complexity of the 1000 days aged Gouda which was not too salty despite the age.
