In the past, farmers created the ‘Jura wheels’ to keep the milk longer during the winter and have this protein source all year long for all their family. These wheels were easier to carry around and to sell. The recipe of the Comté we know nowadays was introduced in the 18th century. Comté has the highest production of all French AOC cheese, it is also one of our best sellers! The Comté aged 18 months has a slightly fruity taste with a soft and creamy paste. The older the Comté is, the stonger is the flavour, so this one is lighter than the Comté aged 24 months.
