These wheels were easier to carry around and to sell. The recipe of the Comté we know nowadays was introduced in the XVIII century. Considerate as the biggest production with 66500 tonnes of cheese annualy, the best sellers can get different flavours depending on its age. The older the Comté is, the stronger the flavour is. Comté AOP 36 months is one of the most intense you can find in our offer. Buttery with some roasted and caramely nuts flavours, its crumbly and crunchy texture is due to the development of Amino acid crystals during its maturation that draws its profil.
