Crémeux Di Bufala is a relatively new cheese, having been created in the 20th century as a way to showcase the unique flavour and texture of buffalo’s milk. The cheese is now produced by several different dairies in Italy and is a popular local specialty.
Crémeux Di Bufala has a creamy texture and a mild, slightly sweet flavour with hints of grass and herbs. Its shape allows the cheese to keep an extremely melting and creamy texture in its centre.
It pairs well with light red wines, fresh young white wines and sparkling wines.
Should be stored in the fridge wrapped in parchment paper.

This is rather similar to a nice Brie, and has a slightly sweet creamy aspect to the taste.
