Shaped like an octogonal shield engraved with a Cathar cross onto its rind, Galette des Templiers is a farmhouse raw goat milk cheese made by the Petit Jabron Dairy in the Provence region.
The cheese is rubbed with a typical Provençal mix of Olive oil, Paprika, and Marc de Provence three times a week during its maturation period, giving it its light orange rind underneath the white natural flower that develops. Its fudgy paste reveals a fresh and delicate caprine flavour.
Perfect for goat cheese beginners, Galette des Templiers is a nice uncommon and tasty addition to your cheese platter with a glass of Provence wine.
Store in the fridge, wrapped in cheese paper, and consume within 2 weeks.

Nice soft goat cheese, that I never tried before. I like the texture, soft on the outside and firm inside. The hint of paprika adds an interesting touch to a generally mild goat milk taste. Please put it again.
