Agour is made by the eponymous cheese dairy, located in Hélette, in the Basque Country. This cheese making factory was born in the 1970 and after a fast expansion it. Nowadays, it includes a whole range of Basque specialities. And what do we find in Basque country apart of cheese? Some Espelette which is a variety of chili that is cultivated exclusively in the French commune of Espelette in the Atlantic-Pyrennees. What a good idea to pair the ewe’s milk cheese with some chili fron the same region. Agour, this raw milk cheese very smooth with subtle notes of Espelette pepper gently rubbed on the crust is perfect for using with Girolle cutter. You can also add the classic Black cherry Jam from the same area.

Red wines (Burgundy, Alsace Pinot Gris)
White wines (Sancerre, Dry Riesling)
