Halloumi Cypriota is a traditional cheese from Cyprus, made from a blend of sheep’s and goat’s milk, and sometimes cow’s milk. It is a semi-hard, brined cheese known for its firm texture, white colour, and mildly salty taste.
The flavour is fresh and slightly grassy, with citrus and minty notes. Halloumi pairs especially well with watermelon during the summer, offering a refreshing contrast. Its high melting point makes it ideal for grilling or pan-searing—once heated, it develops a golden crust while retaining its shape.
Cooking tip: Slice and grill over medium heat for 2–3 minutes per side until golden brown. Serve warm on salads or grain bowls.
Store in the fridge, submerged in its brine, until ready to consume.
