Hercule is born from an old tradition when sheperds always kept a few ewes in their goat herd to secure their food supply as they thought that goats were more prone to catch diseases.
With no room to waste milk, farmers used to blend the different types of milk, from ewe and goat, to make the cheese.This belief resulted in incredibly flavourful and rich cheese.
Hercule is made from 50% of each milk. Its hard paste is buttery in the mouth and offers a sweet, citrusy, nutty and yoghurt like taste.
