Produced by Fromagerie Le Maréchal, this signature cheese was created in 1992 by a family cheese dairy run by Jean-Michel Rapin and his three sons in the Vaud region of Switzerland. Marechal is named after the family grandfather who created it. The family uses traditional artisanal methods and milk supplied by 13 local farms to make it. Aged for a minimum of 130 days and made with raw cow milk, this cheese can be compared to its cousin Comté. The rind is washed and coated with a mix of aromatic organic herbs and the paste has a distinctive aroma of butter, and dried fruits.
