Tender, milky and wet. Stretchy layers peel apart like petals. Fresh grass and tangy whey fill the mouth. No rubber — just soft, weeping curd. Submerged in cloudy brine.

Made daily from water buffalo milk in Campania’s Sele plain. Hand-pulled at dawn, then sold within 48 hours. A small caseificio — same family since 1930. Never frozen, never dried.


Eat at room temperature
— never cold. Tear over tomatoes with basil and oil. Stuff into a crusty roll with anchovies. Pair with Falanghina or a cold lager. Drain off the brine — then open wide. Drip down your chin.
