The Bouchot Mussels from Mont Saint-Michel is the only with the PDO label.
Traditional breeding on sea stakes, “Bouchot” means wooden fence, which prevents them from coming into contact with the ground and therefore sands and parasites.
Benefiting from the biological richness of a unique territory where the highest tides in continental Europe are found, their characteristics are singular: finely iodized, with a specific taste of hazelnut and a slight sweet notes. Their flesh is creamy, silky, and not floury.
Wash and sort the mussels, discarding those already opened, then place them in the pan. Cover and heat for 9 minutes, stirring halfway through.

The mussels were plump and tender, with a rich, briny flavor that was simply divine. I love that they’re harvested from the famous Mont Saint-Michel bay, which adds to their unique flavor and texture.
