Pecorino is one of the oldest cheese, already described in Ancient Rome. The cheese takes its name from the word pecora which means ‘sheep’ in Italian. With its pungent tones of soft spices and seared butter, Pecorino is bursting with character. It has an hard and crumbly texture, and presents ever-stronger flavours as seasons pass. It rind is waxed and inedible. Add a Barolo or Syrah from France to please your palate.
