Sainte-Maure de Touraine appeared after the battle of Poitiers in 972. Legend has it that the prisoners entrusted the secret of the recipe to the inhabitants of the Sainte-Maure de Touraine plateau. In those days, Sainte-Maure de Touraine was made by the grandmother or youngest daughter of the family and it was produced only for the family’s own consumption. It still weighs 250g, since this represents the quantity of milk that a single goat can produce each day.
This cheese reveals scents of undergrowth, damp cellar and straw on the surface, while its heart reveals a fresh, tangy, milky flavor. It has a light, typical taste of goat’s cheese and hazelnut, as well as more pronounced and varied aromas on the rind.
Store in the fridge and consume within a few days.
