Sainte-Maure de Touraine appeared after the battle of Poitiers in 972. Legend has it that the prisoners entrusted the secret of the recipe to the inhabitants of the Sainte-Maure de Touraine plateau. In those days, Sainte-Maure de Touraine was made by the grandmother or youngest daughter of the family and it was produced only for the family’s own consumption. It still weighs 250g, since this represents the quantity of milk that a single goat can produce each day.

This cheese reveals scents of undergrowth, damp cellar and straw on the surface, while its heart reveals a fresh, tangy, milky flavour. It has a light, typical taste of goat’s cheese and hazelnut, as well as more pronounced and varied aromas on the rind.
Store in the fridge and consume within a few days.

    Delicious on bread with a drizzle of olive oil. As noted by others re: storage, we keep this cheese (and really, most other opened cheeses) in an air-tight pyrex box.

    Always a safe choice of goat cheese. I need to wipe away the water droplet inside the container every day as it is not sealed.

    Packaging could be better as the cheese dries quite quickly in the fridge. Else a good nutty flavour and soft texture.

    An excellent cheese! It really wants to be out of the fridge for at least an hour before eating. Remember to put it on a plate. It will try to run away at room temperature.

    This is a very solid example of a Sainte-Maure, and as described it pairs very well with a glass of Chinon. Care is need in storing it though – the container as supplied is not air-tight and I find that, unless it is eaten within a couple of days of delivery, it needs to be put in an air-tight box in the fridge to avoid drying out.
