Sainte-Maure de Touraine is a classic in France. Introduced to the inhabitants of the Sainte-Maure commune by Saracen prisoner after the Battle of Poitiers in 732. Slightly citric and buttery, Sainte-Maure de Touraine has a fresh hazelnut taste, with dry hay and underwood notes. Its white paste has a firm and mousse aspect when young, and become creamy and spreadable after aging. Did you know? There is a engraved rye straw in the middle of this AOC cheese to first, keep the shape of the cheese and second, attest of the AOC and get a traceability of the producer!

Delicious on bread with a drizzle of olive oil. As noted by others re: storage, we keep this cheese (and really, most other opened cheeses) in an air-tight pyrex box.

Always a safe choice of goat cheese. I need to wipe away the water droplet inside the container every day as it is not sealed.

Packaging could be better as the cheese dries quite quickly in the fridge. Else a good nutty flavour and soft texture.

An excellent cheese! It really wants to be out of the fridge for at least an hour before eating. Remember to put it on a plate. It will try to run away at room temperature.

This is a very solid example of a Sainte-Maure, and as described it pairs very well with a glass of Chinon. Care is need in storing it though – the container as supplied is not air-tight and I find that, unless it is eaten within a couple of days of delivery, it needs to be put in an air-tight box in the fridge to avoid drying out.
