Cheese Type: Uncooked, soft cheese with natural rind
This Portuguese cheese recalls the traditions of the Cova da Beira region, between fields and mountains. Flagship food of the famous ‘Festa da Amendoeira em Flor’ taking place during the first two weekends of March, it is often paired with a piece of fresh bread and Alheira, a local sausage. Its uniqueness comes from its combination of a semi-soft paste around a runny centre filled with stracciatelle pieces.
Made from pasteurized ewe milk and cured with an extract of cardon flower, it features an intense grassy flavours but keep acidulous notes. A true Portuguese experience!

As described above, it has a refreshing and balanced acidulous note. It becomes crumbly when ages, which does not reduce its attractiveness.
