Maturation: 6 weeks to 2 months
Cheese Type: Uncooked, Unpressed soft cheese with washed rind
Washed with a solution of brine and Marc de Bourgogne
Made in Burgundy region and known since the 13 th Century, Soumaintrain was named after the village where it was created. The farmhouse washed rind has a creamy texture and a distinct pungent flavour with a buttery and sweet taste. Aged, the maturation develops a powerful bouquet and enhance the orange colour, while the aromatic and stinky smell of the rind is often compared to its cousin, the Epoisses. This IGP cheese is more delicate and can find a perfect pairing with some Creme de Cassis.
