Cheese Type: Uncooked, Unpressed soft cheese with washed rind
Washed with a solution of brine and Marc de Bourgogne
Made in Burgundy region and known since the 13th Century, Soumaintrain was named after the village where it was created.
The farmhouse washed rind has a creamy texture and a distinct pungent flavour with a buttery and sweet taste. The maturation develops a powerful bouquet and enhances the orange colour. The aromatic and stinky smell of the rind is often compared to its cousin Epoisses.
This IGP cheese is however more delicate and pairs nicely with Creme de Cassis.
Store in the fridge, wrapped in cheese paper, and consume within a few days.

This is one of my favourite cheeses – strong but not overpowering on the nose, the flavour is smooth, complex, buttery. The texture is very nice and creamy after it has been at room temperature for a while.
