In 1972, the Martell family made Hunts Court Farm their residence. With a strong commitment to upholding the region’s rural heritage, Charles started breeding the endangered Old Gloucester cows. Over the past 40 years, Charles has developed a range of cheeses, both hard and soft, with Stinking Bishop Baby being the most famous. In addition to his cheese-making endeavours, Charles Martell also established a distillery to make the most of the exquisite pears grown on his estate.
Stinking Bishop Baby is bathed in perry, an alcoholic beverage crafted from a rare pear variety. This cheese, featuring a brownish-pink rind, exudes a strong aroma, yet its taste is pleasantly mild and delightful. Its name, Stinking Bishop Baby, is a fitting tribute to the particular pear variety Charles utilizes to craft the perry.
