Originally from Lombardy, “Taglietelle” means “To prune” in English, derived from their shape in long leaves cut into strips.

Perfect with heavy sauces made of tomato or cream. For sure, one of this marvels will be your liking: with tasty Pancetta for the classic Roman Carbonara, with fresh mushrooms for the traditional Piemontese “Con Funghi”, or with smoothy eggplants for the Sicilian “Con le Melanzane”.
