Renowned since the 10th century and called “strachin” for a long time because it was made when the cows returned from pasture “stracche” (tired), Taleggio is not only an exceptional tasting cheese but also a superb ingredient in the kitchen. Mauri Dairy is world-famous for its Taleggio, which is aged in Pasturo’s natural caves between 2 and 6 °C for at least 45 days.
Taleggio is a half soft cheese with a thin crust. The taste is mild and fruity with a slight tangy edge and a strong aroma.
Taleggio melts extremely well and because of this, works great into a risotto or polenta.
Can be stored for a couple of weeks in the fridge. Tips: To keep the crust soft, wrap the cheese in a damp cloth is recommended.

Taleggio has a smooth, creamy consistency and a rich, slightly tangy taste. It’s great for cooking, particularly in risottos and pastas, or simply spreading on crackers

This is a rather nice taleggio – the aroma is not as strong as some, but the flavour excellent and the paste has a nice cremainess to the texture.
