Thymtamarre, also known as Rovethym, was created by Pierre Pradier of the Jas de Melchior farm in the early 21st century. This cheese combines the flavours of fresh goat’s milk and thyme, creating a unique taste experience.
Thymtamarre has a semi-firm texture with a creamy and slightly crumbly interior. It is adorned with aromatic thyme leaves, infusing the cheese with a delicate herbal fragrance. The flavours are well-balanced, with the tanginess of goat’s milk beautipiecey complemented by the earthy and floral notes of thyme.
Refined for 3 weeks, its fresh & buttery paste melts in the mouth and offers a powerful aroma. It goes perfectly with a Provençal tomato salad, stuffed red peppers or zucchini with garlic.
Store in the fridge, wrapped in cheese paper, and consume within 2 weeks.

To me it’s fine but lacks character, I prefer Sainte-Maure de Touraine much more

Packaged with a sprig of thyme, this was an excellent flavour combination that went down well with some rosé (from Australia as it happens, not the recommended Provençal)
