In 1807, the Prefect Barante defined Tomette des Bauges as the cheese of the «countrysides», and «that we cannot do without at every meal».
La Tomette des Bauges P.D.O. is an uncooked pressed cheese made from raw and whole cow’s milk. On the nose, the Tomette of Bauges smells mushrooms, cellar and wet undergrowth. On the palate, we note rather lactic and fruity flavours, then the mushrooms at the end of the tasting.
