The story of Tomme du Berry is linked to that of Martin van Iperen, a farmer’s grandson, born in the south of the Netherlands. This defender of taste had made it his mission to preserve the typicality of tommes by working with the oldest dairies’ cooperatives in Holland.
We talk about tomme de Berry because these tommes are matured…. in Berry! Martin van Iperen chose to renovate the Champroy estate in France, where he discovered the refining potential of the region’s stone.
This raw cow milk cheese has a tender and smooth paste sprinkled with delicate pieces of black truffle. Milky, buttery and slightly rustic, it is a perfect match between 2 cultures, the sweetness of the French Tomme and the lighty acidity that can remember a Gouda. Perfect with a glass of Champagne!
