This exceptional meat, surrounded by French fatty bacon and tied with a string, is the result of the ancestral know-how of breeders located in an area straddling the Aveyron, Tarn, Lot, Tarn et Garonne and southern Cantal. It is an excellent and very tender meat, perfect with seaside mashed potato!
Cooking recommendations : Sear the sides of the meat in a pan and then cook the roast veal in pre heated oven at 180ºC for 25 to 30 minutes. Baste with cooking juices the meat several times during cooking.
