Pecorino is one of the oldest cheese, already described in Ancient Rome. The cheese takes its name from the word pecora meaning ‘sheep’ in Italian. With its pungent tones of soft spices and seared butter, Pecorino is bursting with character. It has an hard and crumbly texture, and presents ever-stronger flavours as seasons pass. It rind is waxed and inedible. Enjoy it with a glass of Barolo or Syrah from France to please your palate.
