Wyfe of Bath got its name from Chaucer’s Canterbury Tales in the 14th century. Using the old spelling of ‘wife’, the tale is told by a lusty character with strong appetite. Made with organic pasteurized cow’s milk cheese, Wyfe of Bath is a Hard cheese produced as a Gouda style, it is slightly softer (butter texture) and has some sweet and milky aroma. As a hand-made, single-herd cheese, its taste is rich.
