Produced in the region of Castilla la Mancha, Manchego is the King of Spanish cheeses, especially since the Spanish poet Cervantes mentioned it in the famous adventures of Don Quixote. Made with the Manchega breed, a particular breed that only grazes on the shrubs of the vast plateaus of the Dehesa, the sheep’s milk is thick. It only takes 5 liters to make 1 kg of cheese. Rustic, this cheese is recognizable by its shape and the pattern of its rind. It has a cream-coloured paste and a vegetal, herbaceous and nutty taste.
