Considered as the grandfather of all cheeses, Cantal was first produced over 2000 years ago. Matured between 3 to 7 months, Cantal ‘Entre deux’ AOP features hazelnut hints with a citrusy and fruity finish. A bit more marked in aroma than mildest Cantal, you can also find some gourmet toasted brioche notes. Why do we call it ‘Entre Deux’, literally ‘between the two’? There is 3 kinds of Cantal: the young one refined for 30 days at least, ‘Entre deux’ refined between 90 and 210 days, and the oldest one called ‘Vieux’ and refined for 240 days minimum.
