In the past, farmers created the ‘jura wheels’ to keep the milk longer during the winter and have this protein source all year long for all their family. These wheels were easier to carry around and to sell. The recipe of the comte we know nowaday was introduced in the XVIII century, This 30 months aged Comté from Fromagerie Brun has a fruity, nutty taste with a silky hard texture with salty cristals. The older the Comté, the stonger the flavour, so this Comté is more intense than the Comté aged 24 months.
