Gruyère Réserve AOP is a hard cow’s milk cheese from Switzerland that adheres to the Gruyère AOP specifications established in 2001. Also known as Surchoix, it distinguishes itself by its extended aging period of over 10 months, significantly longer than the younger, milder profiles aged a minimum of 5 months.
Gruyère boasts a smooth texture and offers flavours that are sweet, herby, and slightly salty, dominated by fruity notes. It is excellent in fondue but equally delicious in dishes like soufflés or croque-monsieurs.
Our tip: Pair it with some Parma ham—it is simply divine!
Can be stored in the fridge for two to three weeks after opening, or for up to two months if the package remains sealed.

I cooked it with Swiss Emmentaler for my Mac and cheese pasta, which is so creamy and milky but not so tasty. Also delicious to just eat it raw with nuts and dried fruit, highly recommend!

I guess this is pretty classic gruyere – a slightly sweet flavour, easy to nibble with some sherry or on a platter with cold cuts etc.
