Le Maréchal was a tough man with a soft heart, and the cheese named after him reflects his robust character. A relative newcomer to the cheese world, it has been produced by the Rapin family in Granges-près-Marnand, Vaud, Switzerland since 1992. It honours their grandfather Emile Rapin (1852–1943), a blacksmith-farrier (le maréchal-ferrant) from Corcelles-près-Payerne. His portrait appears on every wheel, symbolizing his strong character and iconic mustache.
Le Maréchal resembles Gruyère in texture but comes in smaller wheels aged 130 days. The rind is hand-brushed with aromatic herbs, creating a dark crust flecked with herbs. Inside, it has a light golden paste that is smooth, with few holes. It offers a nutty, herbaceous aroma and a milky, slightly sweet flavour.
This cheese can be enjoyed paired with figs, fig spread, olives, and a glass of dry white wine like Chasselas. In cold weather, savour it melted in a fondue or raclette for the full Swiss experience.
