Marechal is an ivory-coloured, semi-hard Swiss cheese made from cow’s milk. It boasts an exceptionally smooth, creamy texture. The paste has a rich, buttery quality thanks to its high butterfat content, which can reach up to 75 percent.
It offers a fresh, milky flavour with hints of sweetness and a subtle tang. The edible rind has an earthy, mushroom-like taste that beautifully complements the creamy interior.
The cheese is named after Emile Rapin, a 19th-century blacksmith lemaréchal-ferrant in the village of Corcelles-près-Payerne, Switzerland. The cheesemaker Jean-Michel Rapin named it in tribute to his grandfather, reflecting the original and robust character he embodied.

This is an excellent cheese. A strong (but not too strong) nutty, slightly mushroomy flavour. I’m also enjoying nibbling the rind with its herbal flavour. For me it’s pairing quite nicely with a sauvignon blanc!
