Produced in the region of Castilla la Mancha, Manchego is the King of Spanish cheese, especially since the Spanish poet Cervantes mentioned it in the famous adventures of Don Quixote. Made from the rich and thick milk of the Manchega sheep breed that grazes on the shrubs of the vast plateaus of the Dehesa, Manchego shows all the Mancha character. Manchego gets its rustic look after its specific rind pattern.
This month, discover a 1 year old Manchego, aslo known as Viejo Manchego. This brittle and firm gem in textture has a rich, sharp and pungent aroma with peppery hints.

This is an excellent manchego – nice flavours but still a reasonable soft, moist texture (not hard and crumbly). Definitely a repeat buy.

Manchego is a house favourite of ours. The older variety has more developed flavours and is harder.
