Azeitão cheese carries the soul of the region it’s named after, nestled at the foot of Portugal’s Arrábida mountains. Made using raw sheep’s milk and coagulated with thistle flower, it reflects an ancient Iberian cheesemaking tradition that sets it apart. Its fame grew in the 19th century, particularly after 1830 when cheesemakers from Serra da Estrela brought their skills to Azeitão, adapting recipes to local terroir. Today, it holds PDO status and is cherished across Portugal for its distinct personality and artisanal roots.
This small, round cheese has a soft, washed rind and a creamy, spoonable interior. Its aroma carries earthy, herbal notes, while the taste is rich and savoury, with a subtle tang and a vegetal complexity from the thistle rennet. The texture melts luxuriously on the tongue, making it an indulgent experience from start to finish.
To bring out its depth and creaminess, serve Azeitão with a glass of Muscat-de-Rivesaltes AOC, Lou Faurat, Domaine Paul Meunier-Centernach, 2018. This gently sweet wine complements the cheese’s tang and herbal edge, creating a beautifully balanced and elegant pairing.

This is a most excellent cheese in the “washed rind” style. Quite intense aroma and taste, but in a balanced (some spice, but also creamy and tart… complex) way, not horribly stinky.
For me it is pairing very nicely with a brut nature champagne.
