Cheese Type: Uncooked, Unpressed soft cheese with washed rind
Created in 1950 by Raymond Gaugry and produced exclusively by Fromagerie Gaugry in Cote d’Or, Ami du Chambertin took its name from the region where it was created: Gevrey Chambertin in Burgundy. This cheese is similar to Epoisses in a smaller version.
The rind is washed with Marc de Bourgogne which gives this particular orange colour by the development of the the red bacteria and gives it this amazing taste. Powerful in flavour and slightly sharp with subtle rustic bouquet, it gets also some buttery notes which is great with a dark beer or a red wine from Burgundy.
