Made with pasteurised cow’s milk, Tomme des Croquants from Perigord is a creation to pay tribute to the ‘Croquants’, peasants who took up arms to oppose the heavy taxes and feudal rights during the XVI century. Frederic Villefer, created this cheese by using the traditional method and the terroir know-how to make this delicate Tomme.the liquor is characterised by some fruity notes and balances hint of nuts. The rind is rubbed with nut liquort and caramel that gives it this sweet taste. You will like it!
